The Ultimate Potato
The ultimate potato: This potato recipe is so quick and easy. They will become your regular potato dish! Serves 6.
Ingredients:
1 Bag of russet potatoes
1 Quart of chicken/beef stock
2 Lemons
2 cloves garlic
Salt, pepper, & cooking olive oil
Method:
Begin by preheating your oven to 400 degrees F. Peel potatoes and slice into 1 inch thick slices. Pat both sides down with paper towels. In a thick bottomed oven-safe pan (that does all of your potato’s) place on high heat. Add enough oil to the pan to sufficiently cover the bottom of the pan with 1/4 inch of oil. Heat oil till the first wisps of smoke coming off of it. Place all of the potatoes on the bottom of the pan. Lightly crush the garlic with the back of your knife and add the garlic to the oil with the skin intact. At this point, do not touch or shake the potatoes for 4-5 min or until a deep golden brown crust has formed on the bottom of the potatoes. Flip the potatoes and allow to fry for another 3-4 min. Now move the pan to the oven. Carefully add the broth and the juice of two lemons to the pan. Bake in the oven until potatoes are cooked through.
Move to a serving dish top with whatever sauce is left in the pan and sprinkle with a little salt and pepper to taste!
