Bruschetta

This super easy and quick recipe will be your new favorite lunch or appetizer (for when normal life resumes)! Just a few ingredients and pantry staples and you are good to go!!

ingredients:

1 lbs good tomatoes

2 tbsp fresh basil

3 tbsp balsamic vinegar

2 tbsp olive oil

Salt and pepper

Goat cheese

Good rustic bread or a baguette

method:

Begin by dicing the tomatoes and place them in a bowl. Add minced basil, olive oil and balsamic vinegar and stir to combine. Taste and adjust for salt and pepper. Allow to sit for minimum 1 hour but not more than 12.

When choosing your goats cheese try to find a spreadable kind. There are quite a few brands that make them and they are perfect. If you can’t find them just grab a log of goats cheese and bring it to room temperature then just spread on to the bread.

To assemble simply cut thick slices of the bread and toast. Then spread the goats cheese and top with your marinated tomatoes. Drizzle with a little extra olive oil and be the superhero to your hungry crowd!
