Pasta Carbonara

Pasta carbonara

This super easy recipe can be made in the time it takes to make pasta!

Ingredients:

1 lbs pasta

2 whole eggs

3 yolks

1 cup Parmesan cheese

1/2 lbs Bacon/pancetta

method:

This happens quickly so make sure your family is ready to sit down to eat right when your pasta is done.

Set a large pot of water to boil with 3 tablespoons of salt in it. (If you don’t season the water you cook your pasta in the pasta will taste like nothing.)

If using bacon slice the bacon into 1/4 in strips. If you are using pancetta dice the pancetta into 1/4 inch cubes. Then sauté in a pan over medium high heat until golden brown and crispy. Separate the meat from the liquid fat in the pan and reserve 1 tbsp of the fat.

Once your water boils drop in your pasta, giving it a good stir.

In a large bowl add the reserved fat and the 2 eggs plus 3 egg yolks. Beat the eggs in till a smooth consistency is formed and there are no streaks through the mixture. Add your Parmesan and mix to combine.

Taste your pasta to check that it is done cooking. Reserve 1 cup of the pasta water then drain your pasta. Add your drained pasta to the egg mixture mixing immediately. Once all the pasta is coated add about a tablespoon of fresh ground black pepper and stir to combine. If your sauce is too thick for your liking thin it out with a tablespoon or two of the pasta water.

Serve immediately and enjoy!
