Sloppy joes
These are not your average sloppy joes! These sloppy joes will bring you right back to your childhood, but will also make you want to serve them at your next dinner party!!
ingredients:
2 lbs 85-15 ground beef
2 carrots
1 onion
1 bell pepper
1 small poblano
3 tbsp tomato paste
2 cups ketchup
1/2 cup bbq sauce
3 tbsp good mustard
2 tbsp sugar
2 tbsp smoked paprika
2 tbsp smoked chipotle powder
1/2 clove of garlic minced
Salt and pepper
Beef stock
Olive oil
method:
Begin by chopping all of your vegetables in to 1/4 inch dice and measure out the rest of your ingredients. Now place a large heavy bottomed pot onto your largest burner and bring to medium high heat. Add 1 tablespoon of olive oil and add your vegetables to the pan. Sauté till soft and a little bit of color has developed. Now remove them from the pan and increase the flame to high heat. Allow to come up in temperature until it is ripping hot, and now add the ground beef. Push the ground beef into one layer on the bottom of the pan and allow to brown deeply. Once browned on one side begin breaking up the meet to form an even texture through out. Once only a little bit of raw beef is left add your tomato paste and cook that into the meet for 1-2 minutes. Any oil or liquid in the pot should have changed to a yellow orange hue. Now add your spices and sugar and cook until fragrant, about 30-40 seconds. Now add your mustard, ketchup and bbq sauce and stir to coat the meat. The sauce will he thick and hard to move, this is when you use the stock to loosen it. There is no exact measurement because it depends on how tight your sauce is. So the final consistency that you want is thick and syrupy (but in a good way). You need it to be tight enough so it has structure on the bun but not so much that it’s dry. So add stock a little bit at a time stirring until you get that perfect consistency. Now simmer the sauce for another 3-5 minutes to allow the flavors to meld together. Then remove from the heat add back in the vegetables. Adjust with a bit more stock if needed, taste to adjust for salt and pepper and serve on potato buns with American cheese and good sour pickles!
