GORGONZOLA, pear, fennel and prosciutto pizza
This is the perfect weeknight meal! You can pick everything up at the store, assemble, bake and have dinner on the table faster than you can order take out and have it delivered! Just a warning give it 5-10 minutes to cool after you pull it out of the oven!
Ingredients:
Store bought pizza dough
Olive oil
Garlic
Ricotta
Fennel
Prosciutto
Gorgonzola
Pear
Semolina or cornmeal (optional but recommended)
Salt
Pepper
Method:
Pull your dough out and place it on the counter for up to an hour to allow it to come to room temperature. This will allow the dough to be workable. Micro plane two cloves of garlic into two tablespoons of olive oil and allow to sit and marinate while the dough comes to room temperature. And preheat your oven to 400 degrees.
Finely slice the pear and fennel into thin strips. Take a heavy bottom or preferably cast iron and lightly oil the pan including the sides. Sprinkle a little salt onto the pan as well as some cornmeal or semolina. Then stretch or roll out your dough and place it into the pan. Press the dough up he sides of the pan.
Begin layering your ingredients with a thin layer of ricotta cheese, then small dollops of the gorgonzola, sprinkle on the fennel and pear and lay on some prosciutto. Take some of that garlic oil and drizzle it on the pizza ensuring to hit the crust! Add some fresh cracked pepper ok top and place in the oven.
Once placed in the oven reduce the temperature to 350 degrees and bake until the crust is golden brown all around!
DO NOT MAKE THE MISTAKE I MADE AND EAT IT RIGHT OUT OF THE OVEN!! Allow it to cool for 5-10 min then enjoy! If you so decide, you can serve it with a drizzle of honey or balsamic vinegar reduction!
