Chili

The quintessential snowed in food! Perfect for any cold winter night and a great fridge cleaning dish!! This recipe makes enough for 6-8 people!

A few tips and tricks, if your family doesn’t like spicy foods remove the seeds and the ribs from the peppers and/or use less hot paprika. This recipe is a great way to get rid of vegetables in your fridge! Zucchini, squash, asparagus, broccoli, corn, and really any other vegetables you like would be a phenomenal addition!

ingredients:

3-4 cloves of garlic minced

2 bell peppers diced

2 poblanos fire roasted with the skin on diced

2 onions diced

2 cans of beans strained and rinsed

2 chipotles in adobo minced

2 tbsp tomato paste

1/2 lbs chicken chorizo sausage

1 lbs ground bison or beef

1 tbsp ground cumin

1 tbsp chili powder

2 tbsp smoked paprika

1 tsp hot paprika

2 tsp onion pounder

1 tsp fresh cracked pepper

1 quart chicken/beef stock

method:

Begin by placing a large pot or such oven on your largest burner and put it on at high heat. Add a few tablespoons of oil and heat until you see the oil rippling. While that happens decade your chorizo. Add your meats to the pot and brown aggressively. Once fully browned remove the meat and place in a bowl on the side.

If the pan needs more oil add some, then add your vegetables and sauté until fragrant and the onions are slightly translucent. Once they are slightly translucent add your tomato paste your chipotles and your spices. Stir them in and allow the spices and tomato paste to fry. This will release their full flavor. Once intensely fragrant and a good fond has developed add back your meat and stir to combine. Add your stock and bring to a boil then reduce to a simmer. While it is simmering add your beans. Taste for salt and pepper and adjust appropriately.

Allow to simmer for 5 min, then it is ready to eat! I like serving mine with some cheese sour cream and Fritos on top! But also works well served over rice!
