Chicken Souvlaki with Greek Salad and Tzatziki

Ingredients:

2 medium-sized cucumbers

4 cloves of garlic

1 red onion

1 shallot

1 quart of Greek yogurt

1 quart of cherry tomatoes

2 lbs chicken

Pita Bread

Olive oil

Champaign vinegar

Feta cheese

Fresh dill Fresh oregano

Fresh rosemary

1 tbs paprika

Method for the Chicken:

In a bowl place 1 cup of Greek yogurt, zest and juice of two lemons, paprika, 2 tablespoons of olive oil, and 2 tablespoons each of dill, oregano, and rosemary. Add 2 cloves of crushed garlic. Mix to combine and add the chicken cubed in 2-inch cubes. Mix to coat and marinate for a min of 4 hours overnight is even better. When you are ready to grill, skewer, and grill to perfection! Serve with warm pita bread, tzatziki sauce, and Greek salad.

Method for the Tzatziki Sauce:

With either a box grater or the grating blade in a food processor grate the shallots and 1 of the cucumbers. Place the grated shallots and the cucumber in a clean towel and squeeze out all the extra moisture. Add shallots and cucumber in a bowl with 2 cups of Greek yogurt. Add 1 teaspoon each of dill and oregano. Micro plane or mince in 1-2 cloves of garlic, depending on personal taste. Stir to combine. Add two tablespoons of olive oil and salt and pepper to taste. Allow to sit for a minimum of 1 hour.

Method for the Greek Salad: Slice the cucumbers into half-moons and place them in a bowl. Add the cherry tomatoes, cut in half, as well as a teaspoon of minced fresh oregano, and thinly sliced red onions. Add 3 tablespoons of olive oil, 3 tablespoons of Champaign vinegar, salt, and pepper to taste.
