Pumpkin roll woth cream cheese Frosting!!
This is perfect for thanks giving and is super easy to make.
ingredients:
1 can pumpkin
1 1/2 cup flour
2 cups sugar
2 tbs baking powder
Juice of a lemon
1 tsp salt
6 eggs
Vanilla extract
1 1/2 tbsp cinnamon
1/4 tsp clove
1/2 tsp nutmeg
1/2 tsp ginger
1 stick butter
2 packets cream cheese
4 cups powdered sugar
Method:
In a stand mixer add your sugar, pumpkin, eggs, spices, lemon juice, and 1 tsp vanilla extract. Mix until the sugar is dissolved. Once dissolved add your flour, salt and baking soda. Mix until just combine.
Pour the batter onto a greased and parchment lined half baking sheet (13x18 rimmed baking sheet) and place in a 350 degree F. oven for 20-30 min or until a toothpick comes out clean. Once baked remove allow to cool for a few minutes in the pan before turning out onto a heavily dusted, with powdered sugar, tea towels. Then roll the cake up into the towel creating a nice spiral. Allow the cake to cool completely.
To make the frosting place a stick of butter and the two packets of cream cheese in the bowl of a stand mixer and mix until homogeneous. Then add 1 tsp of vanilla extract and the powdered sugar. Beat on low speed till most of the sugar is incorporated then beat on high for 3 min.
To finish the roll, unroll the cake and add a nice even layer of frosting. Then roll it back up and optionally top with more powdered sugar. Serve in slices and enjoy!
